Chopped Grilled Chicken Salad w/Roasted Zucchini & Squash, Mozzarella, & Lemon Vinaigrette


One of our favorites Italian restaurants is this place down the street called, Frankie & Fanucci’s. Their pizza’s are paper thin and baked in a wood fired oven. The crust always has that little bit burnt taste to it and it’s so good.

There was this chopped salad with grilled chicken, roasted zucchini & yellow squash, tomatoes, purple onions, and fresh mozzarella served with this house made lemon vinaigrette dressing. It was a super basic salad, but delicious. Actually, it was the only salad at Frankie & Fannuci’s that Chuck (the hubs) and I could both agree on ordering.

Sadly, this salad is now discontinued. 😦

The good news is I’ve replicated it for Chuck and me, and now, I’m sharing it with you. 🙂

Ingredients for dressing:

  • 3-4 cloves of garlic, pressed
  • 1tsp basil
  • 1tsp oregano
  • 1-2tbsp dijon mustard
  • juice of 2-3 small lemons or 1-2 large (approx. 1/4c)
  • zest of 1 lemon
  • 3/4c extra virgin olive oil
  • salt & pepper

Ingredients for salad:

  • 4-5c mixed greens, rough chopped
  • 1 grilled chicken breast, cubed*
  • 1c roasted zucchini and squash
  • 1/4c purple onion, sliced
  • 1c fresh mozzarella, cubed**
  • 1c mini roma tomatoes, halved

Directions for dressing:

  1. Put first 7 ingredients in air tight container
  2. Shake
  3. Add salt & pepper to taste
  4. Refrigerate and bring to room temperature prior to using – the dressing tastes better if left to “marinate” overnight.

Directions for salad:

  1. Add everything to a large bowl
  2. Toss with lemon vinaigrette
  3. Add salt & pepper to taste
  4. Enjoy


*See my new-to-me technique for perfect grilled chicken here. So as not to overwhelm this salad, I seasoned the chicken breast with only salt, pepper, and garlic powder. Do what you prefer.

**The original salad from Frankie & Fanucci’s used fresh mozzarella. If that’s not available, shredded mozzarella or any other mild cheese is a perfectly fine alternative. Use what you have!
