Mango Lassi Smoothie

IMG_3631This is probably my all-time favorite summer treat. Okay, maybe not my all-time favorite because there’s just so many delicious summer time treats out there, but this is definitely in my top ten. There is this restaurant called, Hampton Chutney down the street from my previous apartment in New York City which served these incredible dosas, cardamom coffees, iced chai teas, and these amazing, seasonal, fresh fruit lassis. Their lassis are delicious and definitely worth trying the next time you’re in the area.

So this version is definitely not as rich and sweet, but it’s equally delicious and very much reminiscent of the mango lassis served at Hampton Chutney. It’s probably a little lighter and healthier, too.

Ingredients

  • 1 banana
  • 1c plain, full fat yogurt
  • 2c frozen mangoes
  • 2tbsp flaxseeds
  • 1/4-1c water

Directions

  1. Add first four ingredients to blender
  2. Add 1/4c of water and blend
  3. Add more water to get to the right consistency

This yields about 4 cups

Notes

This is best served immediately, but will keep in the fridge for 12-24 hours

Leftovers are great in popsicle molds. We have this princess and this kitty mold. Though any mold will do.
