Cucumber & Tomato Salad with a Garlic Soy Vinaigrette

A version of this salad was served pretty much every time my dad grilled during the summer. It’s the perfect accompaniment to grilled meats – it just lightens everything up. Plus who wants to fill up on a green salad when there’s a ton of deliciousness coming from the grill? Oh. By the way, this salad is super easy. And did I forget to mention, it’s yum?

Ingredients:

  • 2-3c cucumber, quartered and sliced (I used an english cucumber)
  • 2c tomato chopped (I used mini roma tomatoes, halved – I find larger tomatoes a bit messy to work with for salads)
  • 1/4 of a purple onion, sliced thin
  • 2 cloves of garlic, pressed
  • 1tbsp extra virgin olive oil
  • 2tbsp soy sauce
  • 1/4c rice wine vinegar
  • 1/8tsp white sugar (I find this dissolves best)
  • a small handful of cilantro, rough chopped
  • 1 pinch red pepper flakes (though you can definitely add more if you like the heat)
  • salt & pepper to taste

Directions:

  1. Combine all the garlic, soy sauce, rice wine vinegar, sugar, and red pepper flakes in a small bowl and whisk together
  2. Add the cucumber & tomato and toss well
  3. Add the cilantro, salt, & pepper to taste
  4. Serve immediately
